Homemade pudding is a really nice treat to make and have. Although it takes a little more work then boxed pudding, it is worth every effort!
Our latest try is coconut citrus pudding. It did come out a bit tarter then some liked, but with a few add-ins, it was a sweet treat for almost everyone!

You need:
2 cups coconut milk (We had light canned milk)
3 tbs flour
2 or 3 tbs cornstarch
1 cup sugar (or more, to taste)
3 eggs
1 cup citrus juice (or less, to taste)
1. Juice all of your fruit, then set aside.

2. Mix together the milk, flour, cornstarch, and sugar in a saucepan. Cook until everything is dissolved.
3. Beat the eggs in a bowl. Carefully pour half of the milk mixture into the eggs, then pour it all back into the pan. Add the juice.
4. Cook thoroughly until thick, then eat warm or place in the fridge to cool.
