Paper Butterfly Photoshoot

Remember the paper butterflies that we made before?
Well, here is the promised photoshoot!

We finally caught up to the butterflies, after chasing them for a while.

Marissa came to them first,

and they came to her!

Sophie looked like a butterfly princess with all of the butterflies around her.

One even landed in Jo's hand,

and another in Robin's hair!

We all had fun with them until they decided to fly away for another day.

Have you seen any butterflies lately? We'd love to hear about it!
Happy butterfly chasing!

Coconut Citrus Pudding

Homemade pudding is a really nice treat to make and have. Although it takes a little more work then boxed pudding, it is worth every effort!
Our latest try is coconut citrus pudding. It did come out a bit tarter then some liked, but with a few add-ins, it was a sweet treat for almost everyone!

You need:
2 cups coconut milk (We had light canned milk)
3 tbs flour
2 or 3 tbs cornstarch
1 cup sugar (or more, to taste)
3 eggs
1 cup citrus juice (or less, to taste)

1. Juice all of your fruit, then set aside.

2. Mix together the milk, flour, cornstarch, and sugar in a saucepan. Cook until everything is dissolved.
3. Beat the eggs in a bowl. Carefully pour half of the milk mixture into the eggs, then pour it all back into the pan. Add the juice.
4. Cook thoroughly until thick, then eat warm or place in the fridge to cool.

Yum!

We also added raspberry jam to the top of ours.

Or you can eat it for breakfast! With some yogurt and berries, it easily made a parfait.

Enjoy!

Paper Butterflies

Butterflies are one of the most beautiful things about summer. And even though summer is almost over, these paper butterflies will last all year long!

First we painted a sheet of paper. You can use watercolor paint, or do what we did and scribble on washable markers.

Then just go over it with water and a paintbrush.
Let dry.

Cut into squares. We made ours 2" on each side (and some smaller ones with the extra paper), but you can make any size that you want.

Fold each square accordion-style,

then tie around the middle with thread.

Spread their wings and watch them fly!

P.S. There's a butterfly photoshoot coming soon too!

7up Biscuits

Maybe you've heard of these before. I had, although we've never tried to make them. And biscuits made with soda is a bit strange. But we tried. And trust me, these are really, really, good!!
They're almost like buttermilk biscuits, with a touch of tangyness. (I don't think that's a word... but it's what they taste like!) And they are sooo light and fluffy. If you haven't made these before, I would recommend trying!

You need:
2 cups baking mix
1/2 cup sour cream
1/2 7up soda
1/4 cup melted butter

1. Mix together the baking mix, sour cream, and 7up.
2. Pour half of the melted butter into a pan. The smaller pan you use, the less biscuits you'll get, but they'll be bigger!
3. Now, the original recipe said to pat out the dough to make them, but mine didn't work like that. So I just scooped the dough into the pan. However you do it, just get the dough in the pan! Then pour the rest of the butter over the top.

4. Bake at 450 degrees for 15 minutes, or until golden brown.

5. Serve on a pretty plate!

I also saw that someone had garlic power sprinkled on the top of theirs. You could probably add some kind of spice to your biscuits as well, but put it on at step 3, after you've poured on the rest of the butter.
Have you made these before, or tried another recipe that seemed strange? How did it turn out?

These would make a great side dish with dinner, or just on their own, with butter and jam. Any way that you eat them, I hope that you enjoy!

Instant Oatmeal Cookie

Well, the cookie isn't instant! But the oatmeal that you use is. I found a great recipe for making a oatmeal cookie that only uses 5 ingredients to make one cookie.

You need:
1 43g package of instant oatmeal
1 Tbls flour
2 Tbls applesauce or yogurt (I used peach flavored yogurt)
1/4 tsp baking powder
1/8 tsp vanilla.

Mix everything together and bake at 350 degrees for 8-10 min.

Although the recipe calls for applesauce, I used yogurt instead and it still came out great. You can really get creative with this recipe by using different flavors of oatmeal with different flavors of yogurt.
This would also be a great idea for a slumber party! Just have an assortment of oatmeals and yogurts, and let everyone make their own!

(And it goes really well with a glass of milk!)
